KARA-AGE. It’s a Japanese
cooking term for deep frying of mostly meat and fish. Just like Tempura,
bite-sized food is marinated in soy sauce, ginger, garlic and sugar with a few drops
of wine. And don’t forget the cornstarch (for texture). Makes the breading a lot
crispier.
Toki’s Kara-age is good (among other things) though I prefer
to have the chicken a bit-bit smaller.
Service is commendable but tends to be a little stiff.
