California Pizza Kitchen kept some of the non-pizza (and non-pasta) items after changing their menu a few months back. Thankfully. One of them is the Thai Crunch Salad (Full P560/Half P325). Tita Nelia (of the Pink Food Shop) introduced me to this salad what became to be one of our favorite comfort foods.
This salad is not light, I have to warn you. As a matter of fact, it's a meal in itself. It has Napa and red cabbage, chicken, cucumbers, edamame, wontons, rice sticks, peanuts, cilantro, carrots and scallions tossed with lime-cilantro and Thai peanut dressing!
The flavors complement each other (with the scallions bringing in the sharp bite) with the peanut dressing with the slightly tart lime-cilantro bringing the dish to perfection. And I just love the texture with every mouthful of this salad!
