Rediscovering Mary Grace Sandwiches & Pasta!

Honestly, I don't think of Mary Grace when I'm hungry. I mean, I go to Mary Grace only to have their Brownies and Chocolate Cake with black coffee after a full meal (in another restaurant). But when former co-teachers (Angie & Amy) planned to have a get together, I suggested Mary Grace at G3 which was the first restaurant that came to mind. They agreed immediately. It was my chance to 'rediscover' their sandwiches and pasta. 

Anyway, how was the food (umikot ang plates namin)? The Grilled Vegetables on Foccacia, I liked the best and the Vigan Longganisa, the least.

Escalivada (Roasted Vegetables) with Romesco Sauce!

Escalivadar is "to cook in hot ashes." Once roasted, the vegetables are seasoned with olive oil, salt and garlic. The choice of vegetables to use is limitless... asparagus, french beans, baby leeks, baby eggplants, zucchini, zucchini flowers and mushrooms! That alone is good food but they are typically partnered with other grilled meat.

But Tita Nelia (Let's Cook My Way) leveled it up by making Romesco Sauce which is a nut-red-pepper-based sauce which is Spanish in origin. She made use of blanched almonds, olive oil, garlic whole peeled tomatoes, and of course, roasted red bell peppers! Have as plenty as you want. Its healthy eating!
