Another authentic ingredient (aside from lamb butter and Greek yogurt!) that Chef Mats Loo is proud of is the Extra Virgin Olive Oil that he uses in preparing his Greek "masterpieces." And Chef Mats emphasizes that Kos Greek Ouzeri uses NOT plain olive oil nor virgin olive oil BUT ONLY Extra Virgin Olive Oil! Right, Chef Mats?
