Filipinos use tripe for Callos (and Goto!) and with oxtail for Kare-Kare. Tita Nelia Sison Silverio (Let's Cook my Way!) gave her cooking class a recipe that uses both for a very good stew which she calls, "Sultan's Delight!" Her recipe calls for one cinnamon stick which gives the dish a fragrant and appetizing appeal which is thrown in before sauteing garlic, onion and ginger and before adding in a can of peeled tomatoes and fresh red and yellow (my favorite) capsicum (bell peppers).
There's another element that contribute to the stew's magic: Eggplant Sauce, which has garlic and onion's powerful flavor. Wanseuy is mixed in giving the final product that distinct kick.
Aside from the Sultan's Stew, Tita Nelia also prepared her own version of Apple Cake with Cream Cheese. Everything about it, I liked. It's moist. Not too sweet, the cream cheese tempered it. Perfect dessert with black coffee.
