"Gambas al ajillo (garlic shrimp) is a popular Spanish dish found
principally in the south and center of Spain. The primary ingredients
consist of shrimp, garlic and olive oil but there are many variations.
It's often served in Spain's tapas bars as an appetizer. However, this
dish is so popular that it's occasionally offered as an entrée." - Wikibooks
I have eaten maybe a hundred variations of Gambas. Joke. Maybe not a hundred but marami na talaga. I have tried Gambas drowning in banana catsup, Gambas with small shrimps, big shrimps, not-so-fresh shrimps, really really spicy Gambas, Gambas hiding under a nest of onion rings, extremely tart Gambas, sizzling Gambas, expensive Gambas, cheap Gambas, dry Gambas, soupy Gambas, and yes, Gambas made by Tita Nelia Silverio of Let's Cook My Way. She prepared her tweaked Gambas recipe as a part of her TAPAS cooking lesson. What came out was this beautifully presented Gambas! Happy eating!
